The best way to do bacon is in a hot oven. Baking times will vary, but the longer it
bakes, the more caramelized the sugar becomes; therefore, this recipe is at its best
when the bacon is cooked closer to "crisp". You can cook the bacon under the
broiler for the last minute or two of cooking, to make it crisp and go that extra step
in caramelizing the sugar, watching it carefully. Take care when removing the pan
from the oven.
Baking time is about 12 minutes for crisp.
Feel free to adjust the "rub" seasonings to your liking.
Ingredients
1/2 lb. bacon
1/2 cup dark brown sugar
2 teaspoons cayenne [more or less to taste]
1/2 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
Method
Preheat oven to 425°
Line a jelly roll pan with aluminum foil. Mix the sugar, cayenne, salt, and pepper in
a small bowl. Sprinkle half the sugar | spice mixture evenly over the foil-lined sheet.
Arrange the bacon in a single layer over the seasoned foil. Sprinkle the rest of the
sugar-spice mixture over the bacon.
Bake 10 to 12 minutes, or to desired crispness. No need to turn the bacon. Drain
on paper toweling.
