Vegetable Stock
Ingredients
2 large unpeel potatoes, quartered
2 large carrots, peeled, thickly sliced
1 large onion, peeled, quartered
1 rib celery, chopped
1 apple or pear, seeded, chopped
1 bay leaf
12 peppercorns
10 cups fresh cold water

Method
Put all ingredients into a large stockpot; heat to boil on high heat. Reduce heat to medium-low. Cover, simmer 45 minutes. Strain stock through a fine – mesh sieve.
