Swordfish Kebabs
Ingredients
1/4 cup olive oil
Juice of 1/2 lemon
1 teaspoon chopped fresh oregano
1 teaspoon sea salt
1/2 teaspoon cracked black peppercorns
1 1/4 pounds swordfish steaks, about 1-inch thick, cut into 1-inch square pieces

Method
Soak 8 bamboo skewers 30 minutes; set aside. Meanwhile, combine oil, lemon juice, oregano, salt and peppercorns in a medium bowl. Add the swordfish pieces; toss to coat; set aside 20 minutes.

Meanwhile, heat an outdoor grill or indoor grill pan. Thread swordfish pieces onto prepared bamboo skewers; grill, turning skewers until fish cubes brown, about 3 minutes
