| Shrimp Rumaki |
| Soy – marinated, bacon – wrapped broiled shrimp
Ingredients 1 1/2 pounds jumbo shrimp, shelled and deveined 1 cup soy sauce 1 cup medium – sweet sherry 1 tablespoon finely grated fresh gingerroot 12 slices bacon, halved crosswise Method Marinate shrimp in a mixture of soy sauce, sherry and ginger 2 – 3 hours in the refrigerator, turning occasionally. Heat broiler to 400°. Drain marinade from shrimp and reserve. Wrap a piece of bacon around each shrimp and secure with a toothpick. Arrange shrimp on a rack in a large, shallow roasting pan and bake, uncovered, 10 minutes, basting one or two times with marinade. Turn shrimp and bake 10 minutes longer, basting once or twice until bacon is nicely browned. Remove toothpicks and serve as a main dish, or leave toothpicks in and serve as an hors d’oeuvre. |
