Seared Salmon BLT's
Ingredients
2 four ounce skinless salmon fillets, sliced about 1/4 inch thick
coarse salt
freshly ground black pepper
2 teaspoons extra virgin olive oil
Juice from half of a lemon
2 tablespoons mayonnaise
4 slices toasted sourdough bread
2 - 4 lettuce leaves
8 slices Applewood smoked bacon, fried to desired doneness
2 thick slices from the last of the summer tomatoes
10 fresh basil leaves

Method
Season salmon fillets with salt and pepper. Heat skillet over medium-high heat and add oil when hot. When oil is very hot, place fillets in skillet and sear until lightly browned, about 2 to 3 minutes per side

In the meantime, combine lemon juice and mayonnaise in a small bowl. Spread mixture on toasted bread and layer as follows: lettuce, bacon, tomato, basil leaves. When the salmon is done, place one fillet on top of the basil leaves, then top with another piece of bread and slice in half.
