Onion, Potato and Egg Scramble

Ingredients
4 –5 slices bacon
8 medium potatoes, peeled and sliced
1 large onion, peeled, sliced and separated into rings
6 large eggs, lightly beaten
Method
In a large frying pan, fry the bacon until crispy. Remove from the pan and drain on
paper towels. Fry potatoes, and onion rings in bacon fat until brown and done.
[Cover pan as needed, but make sure potatoes and onions are stirred frequently to
prevent sticking and to ensure browning]
Break the bacon into little pieces. Add to beaten eggs. Pour the egg mixture into
the pan and scramble over medium heat until the eggs are set.
Serve with toast
