Amy's Sage Cream Sauce
Ingredients
2 tablespoons butter
1/4 pound mushrooms, finely chopped
1 small onion, finely chopped
3 tablespoons all-purpose flour
1 teaspoon dried sage leaves OR 1 tablespoon chopped fresh
3/4 teaspoon salt
1 cup chicken broth
1 cup half and half
fresh sage leaves, optional garnish

Method
Melt butter in large skillet. Add mushrooms and onion, and sauté until onion is translucent. Stir in flour, sage, and salt. Stir until flour is blended into butter [roux]. Cook gently 1 minute. Slowly stir in broth. Heat to boiling, stirring constantly until thickened. Slowly stir in half and half. Cook, stirring until heated through, being careful not to boil the sauce. Pour into serving bowl. Garnish with fresh sage leaves, if desired. Serve on pork, chicken or turkey.
