Roast Beef Roulades
Ingredients
10 slices rare roast beef
8 ounces Boursin, at room temperature
1 1/2 cups fresh rocket

Method
Lay roast beef out on a clean, dry surface. Spread the Boursin evenly over the beef. Place rocket in an even layer over the cheese. Roll the beef, encasing the cheese and rocket, into cigars. Place on a sheet try lined with parchment. Cover with plastic wrap and refrigerate 8 to 12 hours or overnight.

For service, slice the cigars into half-inch pieces. Place on a serving tray cut side up and pass.
