Ingredients
12 slices Texas toast
best quality or homemade Thousand island dressing
2 pounds roasted turkey breast, thinly sliced
1 cup mayonnaise-based cole slaw
12 slices Jarlsburg [Swiss] cheese
Unsalted butter, at room temperature
Method
For each sandwich, use 2 slices bread, one-sixth of the turkey slices, one-third cup
cole slaw and 2 slices cheese.
Assemble sandwiches by spreading one side of each bread slice with Thousand
island dressing. On six bread slices, layer turkey, cole slaw and cheese. Cover
with remaining bread slices, dressing side down. Spread top bread slice evenly
with softened butter; place buttered side down in skillet. Butter up-facing side.
Cover; grill slowly on each side. Serve hot or at room temperature.
