Watermelon, Cantaloupe & Honeydew Melon Salad w. Mint Simple Syrup

Ingredients
2 cups watermelon balls *
2 cups cantaloupe balls *
2 cups honeydew melon balls *
3/4 cup mint simple syrup, recipe follows
Method
In a large bowl, combine the watermelon, cantaloupe and honeydew melon. Add the mint
simple syrup and toss. Transfer to a serving bowl and serve.
Mint Simple Syrup
Method
In a saucepan, combine 3/4 cup water and 1 1/2 cups sugar over medium heat. Bring to a boil,
then reduce heat and simmer for 5 minutes, until the sugar has dissolved. Take pan off heat add
2 tablespoons chopped fresh mint. Let the mint steep while the sugar mixture cools. Use as
directed
* Use a melon baller or a 3/4 inch ice cream scoop to scoop balls out of fresh melon.
Tablespoon measures will also have an edge that is sharp enough to carve watermelon and ripe
cantaloupe and honeydew. Dip into the melon as far as you can and turn to complete a circle
for the most complete and neatest melon balls.
