| I’m a purist when it comes to Lobster rolls. Nothing goes into my lobster rolls except cooked, chilled lobster and homemade mayonnaise. If you can find fresh baked Portuguese rolls, they’re the ones to use. The next acceptable substitute is Top – split hot dog buns. In a pinch, buy a really good quality white bread hot dog bun, but nothing too glutinous.
An acceptable substitute for homemade mayonnaise is Hellmann’s [or Best Foods] mayonnaise. In order to avoid over-mixing the salad, use a long handled iced-tea spoon to whisk the mayonnaise in the jar until it is smooth and creamy. Ingredients 2 lbs cooked, chilled, and rough-chopped lobster meat 1 cup homemade mayonnaise 8 top – split hot dog buns, grilled if desired 8 butter lettuce leaves, optional Method Put the mayonnaise in a large bowl and whisk until smooth. Gently fold in the chopped lobster meat. Put a lettuce leaf in the bottom half of each of the buns. Divide the lobster meat among the 8 buns, mounding generously. Top with hot dog bun tops. Serve immediately. |
