Ingredients 1 medium lobster 1/2 lb. unsalted butter 1/2 cup shallots 4 sprigs fresh thyme
Method Preheat oven to 350º
Kill and rough – chop the lobster [shells and all] and place on a baking sheet with the butter, shallots, and thyme. Bake for 45 minutes. Strain through cheesecloth or a chinois into a mold. Chill until firm. Bring to room temperature for maximum flavor and serve with bread and vegetables.
