Hummus
The word hummus means chickpea.

Ingredients
2 cups canned chickpeas
Generous 1/2 cup tahini
1 teaspoon toasted sesame oil
2 tablespoons Spanish extra virgin olive oil
2 - 3 cloves garlic, peeled
House seasoning or coarse salt, to taste
Freshly and finely ground black pepper, to taste
1 tablespoon ground cumin, or to taste
Juice of up to 2 lemons

Fresh cold water

Spanish extra virgin olive oil, for garnish
Paprika, for garnish
Chopped fresh mint or parsley, for garnish

Method
Put the first set of 9 ingredients in the bowl of a food processor and begin to process. Drizzle water in the feed tube to allow the machine to work the mixture into a smooth purée.

Taste and adjust the seasoning [salt, pepper, cumin and lemon juice].

Mound the hummus onto a serving platter in a roughly even mass. Use the tip of a teaspoon to create a swirl from the outside towards the middle and back out a bit. Drizzle the trench with olive oil, sprinkle with paprika and strewn the hummus and platter with chopped mint or parsley.
