Hone your knife and your knife skills. The trick to a successful condiment is a very
fine [in both senses of the word] dice.
Ingredients
1 red bell pepper, finely diced
1 green bell pepper, finely diced
juice of 2 lemons
4 garlic cloves, finely minced
2 small red onions, finely diced
1/4 cup red wine vinegar
1/4 cup light brown sugar
2 teaspoons ground ginger
1 teaspoon ground white pepper
1/2 cup fresh cold water
Method
Combine all ingredients in a saucepan. Bring to boil and simmer for 15 minutes.
Let cool.
