Blender or Food Processor Hollandaise
Quicker and easier than old-fashioned Hollandaise

Ingredients
4 egg yolks
2 tablespoons fresh squeezed lemon juice
1/4 teaspoon salt
pinch white pepper
1/2 cup hot melted unsalted butter

Method
Blend yolks, lemon juice, salt and pepper by buzzing 25 – 30 seconds in an electric
blender at high speed or 10 – 15 seconds in a food processor fitted with the metal
chopping blade. Now, with motor running at highest blender speed, add melted
butter drop by drop. As mixture thickens, add butter in a thin slow stream. When
about half the butter is in, you can pour a little faster. Continue blending until thick
and satiny, then serve.
