Halibut with Herbed Mustard sauce

Ingredients
1 1/2 tablespoons olive oil
4 6 oz. halibut filets
coarse salt
freshly ground black pepper
3 tablespoons unsalted butter
1 clove garlic, minced
1/3 cup whipping cream
1 teaspoon Dijon mustard
1 tablespoon seasoned rice vinegar
1/4 cup fresh dill, minced
1 tablespoon fresh mint, minced
Method
Heat oven to 400.
Heat oil in large ovenproof skillet over medium-high heat. Season fish with salt and
pepper to taste. Add to pan, cook 2 minutes on each side. Transfer skillet to oven;
bake until fish is cooked through, about 7 minutes.
Transfer fish to serving plates; keep warm. Discard oil from skillet. Melt butter over
medium heat; add garlic, cook 30 seconds. Add cream and mustard. Heat to boil;
cook until thickened slightly, about 1 minute.
Remove from heat.
Stir in vinegar, dill, mint, and salt, and pepper to taste. Spoon sauce over fish.
