Method
For 1 3/4 pound lobsters: Soak 2 cups of mesquite smoke chips in cold water for 30
minutes and drain. Prepare your barbecue [medium-high heat]. Place smoke chips in
8� x 6� foil packet with an open top. Set coals on top 5 minutes before grilling
lobsters.
Bring a large pot of salted water to the boil. Working in batches, drop lobsters head-
first into the water. Cover and boil 2 minutes. Transfer lobsters to work surface.
Immediately split the lobsters in half lengthwise, using a heavy large knife. Crack the
claws with the blunt side of the blade
Arrange the lobsters, cut side UP, on the grill. Cover and grill for 5 minutes. Turn the
lobsters over and grill until just cooked through, about 4 minutes. Remove from heat
and serve immediately or continue with your favorite lobster recipe.
