Gorgonzola Cheese Potatoes

Ingredients
4 medium red potatoes, scrubbed
1/2 cup sour cream
3 tablespoons crumbled Gorgonzola cheese
freshly ground black pepper
snipped fresh chives, optional
Method
Pierce potatoes in several places. Place on microwave – safe plate, cook on high
until tender, 10 to 14 minutes; rotating quarter turn after 5 minutes. Let stand 2
minutes.
Stir together sour cream, Gorgonzola cheese and black pepper in small bowl. Split
potatoes in half and dollop each half with the sour cream mixture. Sprinkle with
chives, as desired.
