Feta in Olive Oil
Ingredients
2 tablespoons finely chopped red bell pepper
2 tablespoon finely chopped yellow bell pepper
1/3 cup chopped fresh herbs [rosemary, tarragon, thyme]
Freshly ground black pepper
1 1/2 lb Feta cheese, cut into pieces
1 1/2 cups light olive oil

Method
Dry bell peppers completely by placing them between 2 pieces of cloth and pressing out moisture. Place herbs, pepper and bell peppers in a bowl and combine. Roll each piece of feta in the herb mixture. Fill a sterilized jar with the feta, sprinkling in the extra herb mixture. Top with olive oil.
Cover and refrigerate, up to 2 weeks
