Dried Cherry Chicken Salad

Ingredients
Salad:
1 cup dried tart red cherries
1 chicken, cooked; meat torn into bite-sized pieces
3 stalks celery, washed, ends removed, coarsely chopped
2 Granny smith apples, washed, cored, coarsely chopped
1 cup coarsely chopped pecans
Dressing:
1 1/4 cups mayonnaise
1 to 2 Tablespoons raspberry vinegar
Method
In a large bowl, combine all of the salad ingredients. In a separate medium bowl, combine the
mayonnaise and the vinegar and mix well. Add the dressing to the salad, and toss gently to coat
well. Chill for two hours, or up to six.
Serves 6
