Crustless Quiche is a great dish for people who don't want to go to the trouble of
making pie crust or are unsatisified with the quality of store - bought crusts, or maybe
you're on a low - carb diet. Even crust lovers won't miss the crust in this recipe.
The trick here is to heat the pie plate after spraying it with non - stick spray, before
adding the egg mixture.
Leftovers are best eaten warm, so re -heat low and slow.
Ingredients
Non - stick cooking spray
6 large whole eggs
1/4 cup heavy cream
freshly ground black pepper
1/8 teaspoon greshly grated nutmeg
1 cup chopped ham, Prosciutto or bacon
1 cup shredded Gruyère cheese
2 tablespoons chopped chives
3 shallots that have been chopped and sautéed in 2 tablespoons of unsalted butter
1/4 cup shredded Gruyère or Permesan cheese for topping
Method
Preheat oven to 400°
Spray a 9 - inch glass pie plate with cooking spray and put it in the oven.
Beat the eggs and stir in the cream, pepper, nutmeg, ham, Gruyère, chives and
shallots. Carefully remove the pie plate from the oven and pour the egg mixture into
the heated dish. Bake for 20 minutes until the center is puffed and set in the center.
Remove to a cooling rack and sprinkle with the cheese for topping. Let set for 10
minutes to melt the cheese before slicing and serving.
