Tom's Crabby Patties
You know ... for kids!

Ingredients

For the crabby patties:
1 pound of lump crab meat
1 egg, lightly beaten
1/2 cup breadcrumbs
1/4 cup mayonnaise
2 tablespoons minced chives
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 teaspoon celery seed
1 teaspoon onion powder
freshly ground black pepper
4 or more dashes of hot sauce

For the pan:
1 tablespoon olive oil
2 teaspoons unsalted butter

For serving:
6 sesame seed buns
Thousand Island dressing
6 Boston/Bibb/Butter lettuce leaves
6 slices end-of-summer tomatoes

Method
Mix well the ingredients for the crabby patties, being mindful to keep the crab intact. Divide in half and form each half into 3 patties to make 6 total.

Heat oil and butter in a large non stick skillet over medium heat. Cook patties until golden brown, about 4 minutes each side.

Put a little dressing on the inside of each of the bun tops; divide the six crabby patties among the six bun bottoms. Top with lettuce and tomato; top with bun tops.
