Compound Butters
A compound butter is nothing more than butter with an additional ingredient, or two,
or four, or more.

For example, Sage compound butter [or any herb for that matter] is as simple as
mixing fresh or dried [use less if using dried] into room temperature unsalted butter,
forming it into a mold [ramekins work nicely] and chilling until firm. For additional
flavor, I sometimes add freshly ground white pepper, the tiniest pinch of sea salt,
and on the rare occasion a little bit of fruit zest. Experiment with your favorite herbs
and spices. Red pepper flakes look pretty and give a hint of heat. A favorite spice
combination adds depth, and dried onions add a sweet crispness.
