| Chipotle Vinaigrette |
| Ingredients
1 teaspoon canola oil 1/4 cup diced celery 1/2 cup diced white onion 3 Tablespoons red wine vinegar 1 chipotle chile in adobo sauce, chopped 1 1/2 cups V8 or tomato juice coarse salt Method Heat the oil in a saucepan over medium high heat. Sauté the celery and onion until tender and aromatic, 4 minutes. Pour in the vinegar and reduce by half. Add the chile and tomato juice, and simmer for 5 minutes. Remove the sauce from the heat, cool slightly, and puree in a food processor or blender until smooth. Season with salt. |
