| Chipotle – Honey Dressing |

| Ingredients 6 canned chipotle peppers 1/4 cup balsamic vinegar 1 tablespoon Dijon mustard 1/4 cup honey 3/4 cup extra virgin olive oil 1/2 teaspoon coarse salt Method Combine peppers, vinegar and mustard in a food processor fitted with chopping blade or blender; purée until almost smooth. Add honey and blend. Slowly pour oil through feeder tube with motor running. Pour into cruet or bowl; stir in salt. Refrigerate until rady to use. |
