| Chicken Cacciatore |
| Ingredients
1/4 cup olive oil 1 3 – 3 1/2 pound broiler – fryer, cut up 2 medium yellow onions, peeled and minced 1 clove garlic, peeled and crushed 1/4 pound mushrooms, wiped clean and sliced thin 1 sweet pepper [red, yellow or orange] cored, seeded and coarsely chopped 1 1 pound can tomatoes [do not drain] 3/4 cup dry white or red wine 1/4 cup tomato paste 1/2 teaspoon rosemary coarse salt freshly ground black pepper Method Heat oil in a heavy kettle over moderately high heat 1 minute, then brown the chicken well; remove and reserve. Stir – fry onion 5 minutes, add garlic, mushrooms and sweet pepper; stir – fry 3 – 4 minutes longer until onions are golden. Add tomatoes, breaking up clumps, blend wine and tomato paste and stir in along with rosemary. Return chicken to kettle, sprinkle with salt and pepper, cover and simmer, stirring now and then, about 45 minutes until tender. Serve with spaghetti. |
