Ingredients
1 clove garlic, minced
4 teaspoons sugar
4 teaspoons Chinese black beans
1 tablespoon chopped pickled ginger
2 teaspoons white wine vinegar
1/2 teaspoon sambal chili paste
1 cup peanut oil
1/2 cup chopped fresh cilantro
pinch coarse salt
freshly ground white pepper to taste
Method
Combine garlic, sugar, black beans, ginger, vinegar chili paste in a blender. Purée
until smooth. Slowly pour oil through feeder tube with motor running. Pour into cruet
or bowl, Stir in cilantro, salt and pepper. Cover and refrigerate until ready to use.
