Benne Wafers
In the South, sesame seeds are called “benne”. These are a South Carolina favorite.

Ingredients
1 cup sifted flour
1/4 teaspoon salt
1/2 teaspoon baking powder
2 cups firmly packed dark brown sugar
1/2 cup unsalted butter
2 eggs, lightly beaten
1 teaspoon pure vanilla extract
2/3 cup toasted sesame seeds

Method
Preheat oven to 325°

Sift flour with salt and baking powder and set aside. Cream butter and sugar until thoroughly mixed; beat in the eggs and vanilla. Slowly mix in the flour mixture, then the sesame seeds, mixing just to blend.

Drop mixture by level tablespoonfuls 5 inches apart on well-greased baking sheets. Bake 10 minutes until lightly browned; cool on sheets about 30 seconds, then lift to wire racks with a spatula. Store in an airtight container when cool.
