Beer Shrimp
Ingredients
2 lbs. medium shrimp
3 12 ounce bottles of beer
1 medium onion, quartered
3 cloves garlic, minced
1/3 cup freshly squeezed lemon juice
4 whole cloves
10 whole peppercorns
4 celery ribs
1 bay leaf
dash cumin, paprika and dry mustard

Method
Rinse the shrimp and set aside

Combine the rest of the ingredients and bring to a simmer. Cover and cook 5
minutes. Increase heat to high and then add the shrimp. When the broth returns to
the boil, reduce heat and simmer until shrimp just turn pink, 1 to 2 minutes. Do
NOT overcook your shrimp.

At the table, with lots of napkins and damp towels at the ready, peel the shrimp and
dip into a great simple sauce made from ketchup and prepared horseradish to taste.
