Asparagus Cookies
Ingredients
1 cup fresh grated asparagus
1 teaspoon baking soda
1 cup sugar
1 cup butter
1 egg, beaten
2 cups flour
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon salt
1 cup chopped pecans
1 cup golden raisins

Method
Heat oven to 375º

Beat together thoroughly the asparagus, soda, sugar and butter. Add egg. Beat well. Sift flour and spices. Add dry ingredients, mix well. Add nuts and raisins. Drop by teaspoonful on greased baking sheet. Bake 12-15 minutes. Cool slightly on pan then remove to wire racks to cool completely. Store cookies in an air – tight container.
