| Artichoke Squares |
| These are a great little appetizer for a casual get together. Cut the squares a little larger to serve as a side dish with your favorite meal
Ingredients 12 ounce can artichoke hearts, not marinated 1 tablespoon extra virgin olive oil 2 medium shallots, minced 3 large eggs 2 large egg whites 8 ounces Jarlsburg cheese, shredded fresh flat leaf parsley, chopped coarse salt, sea salt preferred freshly ground black pepper additional olive oil, for the pan additional parsley sprigs, optional Method Preheat oven to 325° Finely chop the artichokes; set aside In small saucepan, heat olive oil over medium heat, cook minced shallots until tender – about 5 minutes In medium bowl beat or whisk eggs and egg whites until blended. Stir in cooked onion and chopped artichokes, Swiss cheese, parsley, salt and pepper. Lightly coat a 12" x 8" baking dish with olive oil. Spread mixture evenly into coated baking dish Bake 30 to 35 minutes until set and lightly browned. Cool 15 minutes. Cut lengthwise into 4 strips then cut each strip crosswise into 5 pieces Arrange appetizer on serving dish; garnish with parsley sprigs if desired |
