Ingredients
2 cups sugar
4 cups peeled, cored and chopped apple
1/2 cup vegetable oil
1 cup chopped pecans
2 eggs, lightly beaten
2 teaspoons pure vanilla extract
2 cups flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
Whipped cream, for serving
Method
Preheat oven to 350°
Grease and flour a 9� x 13� pan
In a large bowl, combine the sugar and the apples. In a small bowl, whisk together
the oil, pecans, eggs and extract. Pour the egg mixture over the apples and mix
thoroughly
Sift the flour, baking soda, cinnamon and salt over the apple mixture. Combine well
Pour mixture into the prepare pan. Bake for 60 minutes or until a cake tester inserted
into the center comes out just clean
Remove cake from oven and allow to sit 20 minutes before slicing and serving with
whipped cream
