Ingredients
8 flat anchovy fillets, chopped
1 small garlic clove, chopped
1/2 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
1 tablespoon white wine vinegar
6 tablespoons extra virgin olive oil
Method
Mash anchovies and garlic to a paste with salt and pepper using a mortar and
pestle [or mince and mash with a large heavy knife and transfer to a bowl].
Stir in vinegar with pestle [or a whisk], then add oil in a slow stream, stirring [or
whisking] vigorously until dressing is emulsified.
Cook’s Note: The dressing can also be made with Anchovy Paste, simply
substitute the paste for the fillets, garlic, salt and pepper. Proceed as directed.
